How do I cook rice perfectly every time?

I've been cooking for 10 years and I still can't get rice right. Sometimes it's mushy, sometimes it's crunchy, sometimes it sticks to the pot. I'm using a basic pot on the stove. I rinse it, I add water, I boil it, I simmer it. What am I doing wrong? I just want fluffy rice every single time.

Rice is deceptively simple but there are a few secrets that make all the difference:

The ratio is everything: For most white rice, use 1 cup rice to 1.5 cups water (not 2 cups like most people think). For brown rice, it's 1:2.

The method that works every time:

1. Rinse rice in a fine mesh strainer until water runs clear (removes excess starch that causes mushiness)

2. Add rice and water to pot. Bring to a boil over HIGH heat with the lid off

3. Once boiling, reduce to LOWEST heat, cover with a tight-fitting lid, and set timer for 18 minutes

4. DO NOT OPEN THE LID. Don't peek. Don't stir.
