What is the functional difference between active dry yeast and instant yeast?
Do you always need to proof active dry yeast in warm water and sugar before adding it to flour or can you mix it direct like instant variants?

Active dry yeast has larger granules and needs dissolving in warm liquid to activate. Instant yeast can be mixed directly into dry ingredients immediately.
