What is the structural difference between an oil-based and a water-based polyurethane floor finish?

I am sanding and refinishing my hardwood floors. Which protective clear coat offers better durability, and how do their drying times compare?

Oil-based polyurethane leaves a warm, amber glow, is exceptionally durable against heavy traffic, but takes 24 hours to dry and emits highly toxic fumes. Water-based polyurethane dries crystal clear in just two hours with minimal odor, but requires four to five coats to match the durability of oil.
