Why does milk spoil and turn into sour solid chunks structure if left at room temperature?
I forgot a carton of milk on the kitchen counter overnight and by morning it smelled terrible and separated into weird white clumps. What bacterial process happens?

Ambient heat allows harmless ambient lactobacillus bacteria to multiply rapidly. They consume the milk sugar lactose and convert it into lactic acid, dropping pH levels until proteins clump.
